The coarse salt is preferable for meats and fish etc. but when making a risotto or stew or other stovetop dish with many ingredients the fine granules are easier to measure precisely and cook better. A word of caution though, because its finely ground and its sea salt, it is very potent. Much more so than when I use coarsely ground or table salt. I tried it tonight in a risotto and its way too salty! Dial it back your first few tries using it until you get a feel for the potency. Other than that it will be a staple in my spice cabinet!OrsonTx
